Roasted Butternut Squash

Serve with pasta, pesto, and roasted salmon for a complete dish! (To roast salmon fillets, heat oven to 180°C, drizzle salmon with olive oil and sprinkle with salt and/or other seasoning and wrap loosely in a foil parcel. Put in oven for 25 minutes, taking care when opening as it will be full of hot steam).


  • 1 butternut squash (like a small pumpkin)
  • Olive oil
  • Seasoning (salt/pepper/dried basil and oregano/paprika)


Preheat oven to 200°C (180°C fan).

Cut off the top, and bottom, and carefully peel the squash.

Cut into cubes, removing and throwing away the seeds and pulp.

Line baking tray with foil and add two tablespoons of olive oil and your seasoning.

Roast in oven for 45–50 minutes, turning them over halfway through.
